Basmati Rice
1 1/2 cups
Chicken Thighs
500 g
Onion
2 medium
Tomatoes
3 large
Garlic Cloves
6 cloves
Fresh Ginger
2 inch
Plain Yogurt
3/4 cup
Unsalted Butter
3 tbsp
Cumin Seeds
1 tsp
Garam Masala
1 1/2 tsp
Turmeric Powder
1/2 tsp
Red Chilli Powder
1 tsp
Heavy Cream
1/4 cup
Fresh Cilantro
1/4 cup
Lemon Juice
2 tbsp
Salt
1 tsp
Wash and soak basmati rice for 30 minutes. Drain and set aside. Rinse the lentils thoroughly under cold water until the water runs clear.
Tip: Soaking the rice ensures even cooking and prevents the grains from sticking together.
Heat 2 tablespoons of ghee in a heavy-bottomed pot over medium heat. Add cumin seeds, bay leaves, and whole spices — let them crackle for 30 seconds until fragrant.
Add finely chopped onions and sauté until golden brown, about 8–10 minutes. Add ginger-garlic paste and cook for another 2 minutes until the raw smell disappears.
Stir in diced tomatoes, turmeric, coriander powder, and red chilli powder. Cook on medium heat for 5–6 minutes until the masala releases oil from the sides.
Add the drained rice and lentils to the pot. Stir gently to coat them in the masala. Pour in 3.5 cups of warm water or vegetable broth and season with salt.
Bring to a boil, then cover with a tight-fitting lid and reduce heat to the lowest setting. Cook for 18–20 minutes. Do not lift the lid during this time.
Remove from heat and let it rest for 5 minutes without opening. Fluff gently with a fork, garnish with fresh coriander, a squeeze of lemon, and crispy fried onions. Serve hot.
